If you didn’t know, I know the muffin man.
First of all let me just say, I am not the biggest muffin fan. When I was younger my mum decided she would try to make perfect muffins as she thought they would be healthier than cupcakes. She spent weeks testing out different recipes and we all got a bit sick of muffins – if you could call them that lol. Sorry mum! Anyways, I decided to try out a recipe for lemon and blueberry muffins about 3 months ago and booooy these are good. I found this recipe on the BBC food website but it’s originally a Hairy Bikers recipe.
250g self – raising flour
1 tsp bicarb of soda
100g golden caster sugar, plus 2 tsp for sprinkling
1 lemon, zest only
2 free-range eggs
150ml natural yoghurt
2 tbsp milk
12 tsp lemon curd (yum!)
Okay so, first preheat your oven to 200 degrees or gas mark 6 and line a 12 hole muffin tray with muffin cases. I found really fancy, cafe style paper cases from Waitrose – get me!
Next melt the butter in a small pan over a low heat and set aside to cool
Sift the flour and bicarb into a large bowl and stir in the sugar, blueberries and lemon zest.
Beat the eggs until smooth with a whisk and then beat in the yoghurt, milk and melted butter until combined
Lightly mix the wet ingredients into the dry with a large metal spoon
Divide the batter between the muffin cases and add a teaspoon of lemon curd on top and sprinkle on the remaining sugar
Bake for 20 minutes or until well risen and golden-brown – in other words watch the oven like a GBBO contestant
Eat as soon as you dare – the lemon curd will be really hot so try to wait a little bit first if you can!
So tasty, light and fluffy! These truly are the best muffins I’ve ever had, and that’s saying something as like I said, I’m not the biggest muffin fan! If you love baking or just eating (haha) I’d definitely try out this recipe.
